We love chili! I never thought I’d be able to turn my kids onto chili. It always seemed so spicy or the beans were too big. I accidentally found the secret that worked for our whole family. This is our go-to food for winter, rainy weather, and all trips. It’s our stick-to-your-ribs, no one complains, we all love it kind of food. I often make a huge double batch of it and we eat of it in multiple variations for a week.
2 lbs ground beef or 4-6 cups of cubed cooked chicken
1 (29 ounce) can tomato sauce
2 (29 ounce or 4 15.5 ounce) cans kidney beans or black beans
2 (14.5 ounce) cans of diced tomatoes
2 cups frozen green peppers and onion mix
2 cups water
and now for the secret…..
Yep – one pack of Mild Taco Seasonings! Or 1/4 cup of taco seasoning if you buy in bulk. Why? I was all out of chili seasonings and had already made the entire pot! My family loved it!
Directions:
1. Brown the ground beef, drain off fat.
2. In a large pot, combine the beef and all the ingredients. Bring to a simmer over low heat or in your crock pot.
3. Cook, stirring every 15 minutes, for 2-3 hours. (I only cooked it for 15 minutes on med/high heat. Tasted fine. Tastes even better on the next day).
4. Makes 12 servings! Freeze one for a future night.
Beans- I’ve switched out all of the beans in this recipe with black beans. Black beans are more palatable because they are smaller for my eldest!

I love black beans, but have never tried chili with them. I sure will try making chili this way soon.
