Gluten Free Oatmeal Chocolate Bar Recipe

We have figured out our favorite gluten free oatmeal chocolate snack bar recipe.  We still love our Cheerio Chocolate Bar as a treat, but this bar fills us up!  Not only is this delicious, but it’s also dairy free, nut free, and gluten free.  How fantastic is that?  My teenage son and I worked together over several weeks to perfect this oatmeal bar.  Our family is so happy with them, that we now double and triple the recipe.  We even have to ration them out and only allow one-a-day or else we’ll gobble them all up!

Gluten Free Dairy Free Oatmeal Bars

This year my children have taken them to lunch or snack at school.  They’ve each had teachers ask to try them.  They are the perfect snack for school, after-school, and on the go.  I like to freeze them individually in snack size baggies.  One child prefers them frozen, the other likes them thawed in the microwave for 30 seconds, and I prefer them fresh!

Gluten Free Oatmeal Chocolate Bar Recipe

  • 2 1/2 cups oats (Trader Joes Rolled Oats (gluten free) are my favorite)
  • 1/2 cup Brown Sugar
  • 1 tsp. Baking Powder
  • 1/4 tsp. Salt
  • 2 tsp. Cinnamon
  • 3/4 cup Semi Sweet Chocolate Chips or Enjoy Life Dairy Free Chunks (click here)
  • 1/2 cup Sunflower Seeds (unsalted)
  • 1 tsp. Vanilla
  • 2 eggs
  • 2  Mashed Bananas (we take our ripe bananas and mash them in a quart bag and freeze until needed)

For a DOUBLED Batch of the Gluten Free Oatmeal Chocolate Bar Recipe

  • 5 cups oats (Trader Joes Rolled Oats (gluten free) are my favorite)
  • 1 cup brown sugar
  • 2 tsp. baking powder
  • 1/2 tsp salt
  • 4 tsp cinnamon
  • 1.5 cups chocolate chips, Enjoy Life Dairy Free Chunks (click here)
  • 1 cup Sunflower Seeds (unsalted)
  • 2 tsp vanilla
  • 4 eggs
  • 4 mashed bananas

Baking Directions for the Gluten Free Oatmeal Bars:

  1. Spray muffin pan with non-stick oil
  2. Use a 1/3 of a cup to fill the muffin pan (square)*
  3. Bake at 350 degrees for 20 minutes or until they’re not shiny.

*I used a square muffin pan like this one because I love it and they look like snack bars.  You could certainly use a regular round muffin pan.  I’m sure an 8×11 pan would work too, I just don’t know how long you’d bake it for.  If you try it, let me know!

Two Tricks for Making Oatmeal Chocolate Bar Recipe:

  1. As soon as bananas start turning brown, I put them in a pint-size (sturdy) zip top bag, squish them, and then freeze it flat.  When the time comes to make this recipe, I have the bananas already to go.  I just thaw them on the counter, cut off the corner and push out all of the bananas.  Mashing them is a great job for a child helper.
  2. Make Your Own Mix:   When I’m measuring and making the Oatmeal Chocolate Bars, I also put all of the dry ingredients into a pint-size (sturdy) zip top bag.  I omit the vanilla, eggs, and mashed bananas.  Sometimes, I also leave out the brown sugar because it was getting too hard.  Write the directions in permanent marker on the bag and you’re set for Oatmeal Chocolate Bars in the future.  Write on the front of the bag:  1 tsp vanilla, 2 eggs, 1/2 cup brown sugar, 2 mashed bananas – 350 degrees for 20 minutes.  This is not for the double batch.

I love to freeze these individually in baggies.  My kids can pull out a bar for lunch or snack after school.  Just enough sweet to go along with the hearty goodness.
